                                                 Spicy Cheesy Pork & Rice Skillet meal

  

           Looking 4 a quick easy weeknight meal, look no further than this 30 minute meal. No oven                        needed here. The Salsa Con Queso gives it a little bite for those who like spicy but not so                              overpowering that those who don't like spice or for children 
     My kids devoured it. I created this meal with what I had on hand, and I had never made it before .I                  think it turned out pretty well, if I don't say so myself. Ha!


                                Ingredients:                                                                                                                             
              2 boxes Rice-A-Roni Long grain & wild rice
              3 cups of Chunk'd Pork Chop meat
              1 pckg of Liptons Cheddar Brroccoli Rice
              1 jar of Salsa Con Queso

             NOTE: you can use 3 Boxes, this is what I had on Hand in my pantry.

  


                    Directions:

    Fry diced Pork until browned. Set Aside!

    Brown the Rice a Roni and cheddar broccoli rice according to Rice-a-Roni package directions. Except             when you add the water after browning rice add 4 cups of water instead.
    Then after you add the water add the cooked pork and boil all together. This helps keep the meat                     tender and from being dry. Cook all together according to R-A-R directions of 20 minutes.

  


              Then add the Salsa con Queso. And cook for 5 minutes or until hearted thru.
               Eat and Enjoy!

                                                 Cheesy Tot Casserole

   Kids will love this Cheesy  take on the classic dinner favorite.  My kids        balk at vegetables but decided they liked it when I added Cheese on top.        And when your busy nothing beats a good casserole, which gives you time          get something done while its baking in the oven. 

                   Ingredients:
         1LB Ground Beef
         1/2 onion, (I prefer Vidalia , from my time living in Georgia)
         1 can of Cream of Chicken Soup
         1 small bag Frozen Mixed Veggies
         1-2 Cups of shredded sharp Cheddar cheese
         1 bag of Tator Tots
         8 Slices of Singles Cheese, American
           Salt 

        NOTE: Short on time , u can use 1/4 cup chopped onion Spice,                     and a can of Mixed veggies, but while this saves time it sacrifices             taste. Or you can always chop onion and leave in a storage container             for times when your short on time. The use of canned mixed veggies               shaves of about 5 minutes but again you sacrifice taste. 

 
                    Directions: 
         Preheat Oven to 425*
         In a Skillet Brown ground beef and onion, crunmbling ground                      beef with a fork as it cooks. about 10 minutes
         Then Drain juice and add Cream of Soup and mixed Veggies, cook until            veggies are heated about 10 minutes. Then add shredded cheese and                cook until cheese is melted. 
       Then pour all into a baking dish or pan and top with Tater Tots. bake            in Oven for 25 minutes
       Remove from oven and top with 8 cheese slices , salt over the cheese            slices and bake for an additional 5 minutes, to melt cheese.



                                               Serve and enjoy!


      TIP: as seen in the picture I don't use canned cream of Chicken                   soup, I make my own Cream of Soup Mix, I am a huge fan of Taste               of Home here is the link to the recipe.....

                                                  Meaty Crust-less Pizza

                     This recipe is a new and original creatiion. I just made this recipe and I gotta tell u                           it is Fantastic for an experiment, I was surprised it came out so well, I made another, My 16 year old               daughter actually clapped literally after eating a sampling. Try it and trust me You won't miss the                     crust at all. I say make this and pair with a salad.

                      This recipe took me about 35 minutes to the table. The measurements are a                                   guesstimates as I just put this together and didn't really take measurements

       This is a naturally Gluten Free meal as you don't use a traditional bread crust.  

       My kids loved this fresh take on pizza and asked for seconds.They didn't miss the bread crust at all.

                                 Your Grocery List Ingredients:

                1 tube of Turkey Breakfast sausage (I used Honeysuckle)

                1 tube of Italian Sausage (I used Jimmy Dean Italian)

                1 Jar of your Fav Pasta sauce ( I used Valentino's Sweet Basil)

                1 Pack of Turkey pepperoni (I used Bridgford)

                1 pack of Real Bacon bits ( I used Oscar Meyer Uncured)

                1 Pack Of shredded Mozzarella or Pizza Blend  cheese

                1 Green Bell and or Other Bell Pepper

                Cooking Spray (I used grapeseed oil spray)

                                 Directions: 

              Preheat Oven to 400*

     Meanwhile, take 1/3 of the Turkey sausage tube and  mix 1/4 tube of the Italian                                    Sausage together, I mixed in my hand so I wouldn't dirty up a bowl then Spread                                  the Sausage Mixture into a Pie pan, ( when I make pies, using store bought                                          crust, I always save aluminum foil pans for re-use.

     Place in Oven & Bake for 15 minutes

     Remove from Oven and top with Pasta Sauce , I used about 1 Cup of                                                  Sauce. Remember I didn't measure so I think it was more like 1 and a                                                  half. Layer on about 1/2 to 1 cup of Cheese. layer on pepperoni and bacon                                          bits. Top with Green Bell pepper, and Bake for 10 more minutes  or until                                              Cheese melts.

      This Recipe is too easy since the crust is easy to push into a pie pan.  1 No Carb                                           Meaty Pizza Pie serves 2-4. So adjust to your needs.

                                    Easy Stovetop Shepherd's Pie

                            This Next Recipe Is easy although it takes two pots or pans                                                           not one! Warning this is no fancy recipe it is just a regular every day recipe                                                     for busy people who are living on a budget and don't feel like spending an                                                       hour in the kitchen for dinner.

              I will not judge you for taking short-cuts, I am not about impressing you with                                                   my knowledge of fancy dishes, I am all about saving you time and money                                                     so you can spend a little more time with your loved ones who ever they may be. 

              It's okay to use convenience Foods to make dinner. Here You CAN lose the                                                   guilt! Ha! You don't have to be perfect or create fancy time consuming dishes,                                               That's what a restauarant is for. 

              For a family of four:

           prepare boxed Mashed Potatoes (That"s right I said Potatoe Flakes,Ha) for 4 servings

                       Use four cans of a Red Meat Based soup heat in a pan until warmed                                                              through. (if you happens to have Beef stew on hand I say use it)                                                                                                                                                                                                             

                     

              Put potatoes on a plate pour warmed soup  over potatoes and Voila! Dinner                                                   is served. Salt and pepper to taste.

                     Trust me some people are already doing this , I am just the first                                                           person admitting that I do use convenience foods. This meal is great                                                             especially on a cold winter day, Very hearty and filling with the potatoes.
