Looking for a new holiday pie to try out, here is a new creation of mine I did an extra pie substituting Vanilla extract in place of mint, for a year round pie.
INGREDIENTS: per pie
1 shortbread pie crust 1 pistachio instant pudding mix 1/4 Tsp Mint extract
2 cups of Cool Whip 1/8 Tsp Mint extract 1/2 cup Candy Cane pieces ( i used Andes Peppermint Crunch) Chocolate shavings (optional)
Prepare pudding mix according to package directions, except decrease milk to 1- 1/2 cups, blend and add mint extract.
Pour into pie crust and refridgerate for 30 mins
In a small bowl mix cool whip and 1/8 tsp of mint extractthen spread over pie. Refridgerate until served.
My Vanilla version for a year round pistachio pie
Garnish with chocolate shavings if desired.

Caramel Apple Pie
Now that we are getting into fall weather, time to get out my comfort food recipes. The fall is the perfect time to try this new recipe, as apples typically go on sale frequently during this season. i love apples of any dish, they usually have just enough sweetness to satisfy a sweet tooth but not so much that it'll ruin your appetite.
2 pie crust 4-6 baking apples (i used Braeburn) 1 cup Kraft Caramel Bits 1 TBSp Milk 1 TBSp Granulated sugar.
Preheat oven to 375*
once oven is preheated prebake bake crust alone for about 10-15. (this is important) meanwhile peel & cut up apples into wedges or cubes, your preferences. Remove crust from oven
NOTE: dont 4get to have apples sit in cold water so they wont lose color.
In a sauce pan melt caramels in the milk & sugar, stirring frequently.
Drain water from apples & poor apples in crust. Then poor the caramel sauce over the apples. Crumble the second crust over the apples for a pie crust topping.
Bake at 375* for 30 minutes. Let cool completely before sering with Vanilla Ice cream if desired.
Easy as apple pie..........wait it is Apple pie, Ha!

Easy No-Bake Cheesecake
I have made this Easy Cheesecake recipe for many years. And It is a great one to make during the sweltering summer months as No Oven is required, that"s right I said No-Bake people!
1 Store Bought Graham cracker Pie crust 1 8oz of Cream Cheese,cubed 1/4 cup of sugar 1 and 1/2 cup of Cool whip 1 tsp of Vanilla Extract
Mix the cream cheese, sugar and cool whip together then add the Vanilla, then Pour into Pie crust and freeze for 2 hrs.Slice and enjoy. It's just that easy!
