Easy Fish Tacos n Chipotle Mayo
Ingredients:
4 Cod Fish Fillets cooked (Baked In 425* for 25-30 mins)
4 Cups Of Lettuce (Can buy pre-shredded, Just don't 4get to Rinse)
2 Cups Of Shredded Mexican Blended Cheeses
Jar of Chipotle Mayo, I used Kraft.
2 Limes
2 Tomatoes
8Corn Tortillas (Sometimes I use Low carb Flour tortilla)

Directions:
Prepare Fish according to package directions, Meanwhile Rinse the lettuce( Or even Cabbage)
Dice tomatoes. Cut Limes in quarters for easy squezing, Wrap Tortillas in a paper towel and warm in Microwave for 30 seconds or more if necessary. By this time Fish is ready to come out of oven,
Then build your taco. Place 2 tortillas on a plate, top with crumbled Fish piece, Cheese, Lettuce and Tomato, then squeeze the Chipotle Mayo then squeeze a little lime juice on the tacos, Eat and enjoy.
Do be sure to use 2 tortillas if using corn they are pretty fragile so two works best , If using Flour tortilla u only use one However this recipe in my opinion taste better with corn Tortillas.
For a low-carb option omit the Tortillas and it becomes a great protein(Fish) based salad that is tasty and delicious change from the normal salads.
This Meal is 30 minutes to the table. I bake more than I need when doing the fish then later warm it up in the microwave and make a quick fish salad that takes less than ten mins. to put together.
Fish Tacos are Just That Easy to make!
