Easy Philly Salad

Summer is almost here. Im sure you're alot like me and eat a lot of salads, and sandwiches in the warmer months. Many people think you can't do steak in a salad. There are very few recipes using steak, but I came up with this one, mostly because I love a Philly cheesesteak, and it's super easy to make, using deli meat. This Salad takes less than 15 minutes to assemble.
INGREDIENTS: 1 cup Spinach 1 cup romaine 1/8 Cup Carrots 1/8 cup Sweet onion, chopped 1/8 cup Green Bell Pepper, chopped 1/4 - 1/2 cup Shredded mozzarella 1 thick sliced deli Roast beef Mayo Ranch Dressing or your favorite
DIRECTIONS: Sear the roast beef, onion and bell pepper andif desired, the carrots, in a preheated pan on medium heat for just 1 - 2 minutes. Add to the salad greens, top mozzarella then with a small drizzle of mayo and add your favorite dressing.

Tropical Side Salad

The Spring/Summer season is here, and that means it'll soon be too hot for oven meals. This salad is a perfect match for whatever you got on the grill. Salads can also be prepared as a meal by themselves, but this salad will also Satisfy a sweet tooth, without adding inches. If you've been trying to get your kids to eat more green, definitely have them try a bite of this sweet salad and I'm sure this will soon become a family favorite.
My paternal grandmother who I visited in Tennessee made the base for this salad frequently during the sweltering summers. In the south, it is customary to have 1 dish in the meal that is sweet. This salad was a welcome relief from the southern heat & humidity. Her simple, easy pineapple & cheese salad, is great just by itself. But I updated it and made it my own adding just two more ingredients. If my kids love it, yours will too.

Ingredients:
Bag of your favorite lettuce blend, rinsed & drained 1 1/2 cups cheddar cheese 1 - 15oz can pineapple tidbits ------------ 1 1/2 Cups of toasted coconut flakes 1 1/2 Cups Macadamia nuts, (Optional)
TIP: Any salad can be gluten free omitting bread based croutons. Experiment with different nuts to find the one that suits The salad your eating. You can still have crunch in your salad using nuts.
Your favorite dressing, although I must suggest Bleu Cheese, which goes extremely well with this salad.

Directions:
Well do I really need to tell you how to assemble a salad, lol.
This salad's cool refreshing taste is sure to become a hit at any gathering & gluten-free will love it too. The crunch comes from nuts not from croutons.
